Diabetic Recipes: Fresh Salsa and Cuban Black Bean

Fresh Salsa

Ingredients;
  • 1 tablespoon jalapeno, seeded and chopped
  • 3 green onions with green tops, chopped
  • 1 large tomato, seeded and chopped
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • 1/3 cup fresh cilantro, chopped
Fresh Salsa for Diabetics

Directions
  1. Combine all the ingredients in a bowl and mix well. 
  2. Leave at room temperature for 30 to 60 minutes for flavors to mingle. 

Cuban Black Beans

Ingredients;
  • 2-1/2 cups dried black beans
  • 1 tablespoons oregano
  • 1 bay leaf
  • 1 green pepper, sliced
  • 1 teaspoon salt
  • 1 medium onion, chopped
  • 2 teaspoon cumin
  • 2 tablespoons olive oil
  • 1/2 teaspoon ginger
  • 2 quartt water
  • 1/4 teaspoon pepper
  • Enough water to cover the beans
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
Cuban Black Beans for Diabetics

Directions;
  1. Cover the beans with cold water and soak them for 8 to 12 hours. Discard the water. 
  2. Combine all ingredients in a large stock- pot. Bring the mixture to a boil over medium-high heat. 
  3. Once the mixture boils, reduce the heat and allow beans to simmer for 1 1/2 to 2 hours with cover slightly ajar. 
The age of dried beans affects their cooking time. Older beans take longer; fresh beans cook faster.
