Fresh Salsa
Ingredients;- 1 tablespoon jalapeno, seeded and chopped
- 3 green onions with green tops, chopped
- 1 large tomato, seeded and chopped
- 1/2 teaspoon salt
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice
- 1/3 cup fresh cilantro, chopped
- Combine all the ingredients in a bowl and mix well.
- Leave at room temperature for 30 to 60 minutes for flavors to mingle.
Cuban Black Beans
Ingredients;- 2-1/2 cups dried black beans
- 1 tablespoons oregano
- 1 bay leaf
- 1 green pepper, sliced
- 1 teaspoon salt
- 1 medium onion, chopped
- 2 teaspoon cumin
- 2 tablespoons olive oil
- 1/2 teaspoon ginger
- 2 quartt water
- 1/4 teaspoon pepper
- Enough water to cover the beans
- 1 teaspoon lime juice
- 1 teaspoon chili powder
- Cover the beans with cold water and soak them for 8 to 12 hours. Discard the water.
- Combine all ingredients in a large stock- pot. Bring the mixture to a boil over medium-high heat.
- Once the mixture boils, reduce the heat and allow beans to simmer for 1 1/2 to 2 hours with cover slightly ajar.
